Homemade Pico de Gallo

Homemade Pico de Gallo

Pico de Gallo is a classic Mexican fresh salsa made with ripe tomatoes, onion, jalapeño, cilantro, and lime juice. Unlike cooked salsa, everything is chopped fresh, giving it a bright, juicy, crunchy texture. It’s perfect with tortilla chips, tacos, grilled meats, eggs, burritos, and quesadillas.

Ingredients

  • 5 medium ripe Roma tomatoes
  • ½ medium white onion, finely diced
  • 1–2 fresh jalapeño peppers, finely chopped
  • ½ cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • ½ teaspoon salt, or more to taste
  • 1 small garlic clove, finely minced — optional
  • ¼ teaspoon black pepper — optional

Instructions

1. Prepare the tomatoes

Wash the tomatoes and remove the stems. Cut them in half and remove some of the seeds and excess liquid if they are particularly juicy.

Dice the tomatoes into small, even pieces and place them in a large bowl.

2. Chop the vegetables

Finely dice the white onion and jalapeño. Add them to the tomatoes.

For a milder Pico de Gallo, remove the seeds and inner membrane from the jalapeño before chopping.

3. Add cilantro

Chop the fresh cilantro and add it to the bowl. Cilantro gives Pico de Gallo its classic fresh Mexican flavor.

4. Add lime and seasoning

Pour in the fresh lime juice and sprinkle with salt. Add the minced garlic and black pepper if using.

5. Mix gently

Use a spoon to gently mix everything together. Don’t mash the tomatoes—you want the Pico de Gallo to remain fresh and chunky.

6. Let it rest

Allow the Pico de Gallo to sit at room temperature for about 10–15 minutes before serving. This gives the onion, jalapeño, lime, and tomatoes time to blend their flavors.

Taste and add additional salt or lime juice if needed.

How to Adjust the Spice

The jalapeño determines much of the heat.

  • Mild: Use 1 jalapeño and remove the seeds.
  • Medium: Use 1–2 jalapeños with some seeds.
  • Spicy: Use 2 jalapeños and keep the seeds.
  • Extra spicy: Add a finely chopped serrano pepper.

Tips for the Best Pico de Gallo

Use ripe tomatoes: Since this is a raw salsa, tomato quality makes a big difference. Roma tomatoes are excellent because they are meaty and less watery.

Dice everything evenly: Small, similar-sized pieces make every bite more balanced.

Use fresh lime juice: Fresh lime has a much brighter flavor than bottled lime juice.

Don’t over-salt: Start with a small amount and add more after the mixture rests.

Don’t make it too far ahead: Pico de Gallo tastes best when fresh. The tomatoes release more liquid as they sit.

Drain excess liquid: If your tomatoes become very juicy, simply spoon off some of the liquid before serving.

Optional Additions

You can customize Pico de Gallo with a few simple additions:

  • Diced avocado
  • Finely chopped cucumber
  • Diced mango
  • Fresh corn
  • Black beans
  • Extra cilantro
  • A squeeze of orange or lemon juice

For traditional Pico de Gallo, however, keeping it simple is best.

Fresh Pico de Gallo is delicious with:

  • Tacos

  • Burritos
  • Fajitas
  • Enchiladas
  • Grilled chicken
  • Grilled steak
